*As mentioned, I buy my meats for the week based on what is on sale.  If my meat is cooked when I arrive at home, then adding a couple of sides is easy.  If you have a programmable crockpot, it is worth the extra cost especially if you are gone for more than the provided cook time. Also, I usually use store brand for most products just for a cheaper price. Lastly, I spray my crockpot before every use with cooking spray. Liners are also good for easy clean up.

Ranch Chicken

Ingredients

  • 1 packet of ranch dressing mix (I use the generic, if available)
  • 1 can of cream of chicken soup
  • ½ cup of chicken broth
  • 1 to 1.5 pound of boneless chicken breasts (depends on the number being served)

Instructions

  • Combine the ranch mix, soup and broth and pour and spread on the bottom of the crockpot
  • Add the chicken and push into the mixture.
  • Cook on low for 4-6 hours
  • Serve with green beans and rice
  • Enjoy! 

Ranch Chicken Tacos

Ingredients

  • 3-4 chicken breasts
  • 1 packet of taco seasoning 
  • 1 packet of ranch seasoning
  • 2 cups of chicken both (low sodium if needed)

Instructions

  • Add all the ingredients to the crockpot
  • (I usually add the seasonings to the broth, mix and pour on the chicken.)
  • Cook low 4-6 hours
  • Shred chicken with a fork
  • Serve with shells, tortillas or nacho chips
  • Additional sides lettuce, sour cream, pico or salsa.
  • Serve with rice or refried beans
  • Enjoy!

Garlic Parmesan Chicken Pasta

Ingredients

  • (12 oz.) bottle Buffalo Wild Wings Parmesan Garlic Sauce
  • 1.5 pounds of chicken breast
  • 1 teaspoon of salt and 1/2 teaspoon of pepper
  • 1 cup of milk (we use 2%)
  • 8 oz. cream cheese (softened)
  • 1 cup of parmesan cheese (I buy the shredded bag but you can grate)
  • 12 oz. or 16 oz. of pasta (rotini or penne)

Instructions

  • Add chicken to crockpot
  • Pour Buffalo Sauce over the chicken
  • Add milk to empty sauce bottle and shake and add to crockpot
  • Add softened cream cheese (cubed) and parmesan and stir in 
  • Cook on low for 3-4 hours
  • Shred chicken
  • Cook pasta according to box directions just a bit before ready to eat
  • When done, mix with crockpot mixture
  • Serve with broccoli or peas
  • Enjoy!

Pork Chop with Veggies

Ingredients

  • 4 bone in pork chops
  • 1 small bag of red potatoes halved or quartered
  • 1 onion, sliced
  • 1 tsp of mince garlic
  • 1 cup chicken broth
  • 1 tbsp. Worcestershire sauce
  • Salt and pepper to taste

Instructions

  • Season your pork chops with salt and pepper
  • Put the sliced onion and garlic on the bottom of the crockpot
  • Put porkchops on top of onion and garlic mixture
  • Scatter the potatoes on top of the pork chops
  • You can add carrots or green beans 
  • Mix the broth and Worcestershire sauce together then pour over the items in the crockpot.
  • Cook low for 6-8 hours 
  • Serve and enjoy!

Crockpot Chicken with Green Beans and Potatoes

Ingredients

  • 1.5 pounds of boneless chicken breast
  • ½ pound of fresh green beans or canned green beans
  • Quartered red potatoes (I buy the small bag and quarter and add enough for my family)
  • ¼ cup olive oil and lemon juice
  • 1 tsp of minced garlic
  • (Salt, pepper, onion and Italian season)

Instructions

  • Add chicken to bottom of crockpot
  • In small boil, mix the olive oil and lemon juice and all seasonings together
  • Put potatoes and green beans on chicken and pour the mixture on top of everything.
  • Cover and cook low for 5-6 hours.
  • Serve and Enjoy!

Spaghetti and Meatballs

Ingredients

  • Bag of frozen Italian meatballs 
  • 3 Cups of marinara sauce (your family favorite)
  • 1 cup mozzarella cheese
  • Italian seasoning to taste

Instructions

  • Cook meatballs with spaghetti sauce on low 2.5 hours.
  • Cover with cheese and cook for 30 more minutes
  • Cook spaghetti noodles by box directions
  • Serve with corn and Texas Toast
  • Enjoy!

Crockpot Pulled Pork Sandwiches

Ingredients Instructions

  • 2-4 pound pork roast (I only buy when on sale)
  • 1 packet of onion soup mix
  • 1/4 cup steak sauce
  • Put pork roast in crockpot
  • Pour on the steak sauce 
  • Sprinkle in the soup mix
  • Cook on low 7 to 10 hours depending on size of the roast
  • Pull the pork apart
  • Serve by itself or as a sandwich
  • Sides fries, slaw or a salad (for healthier choice)
  • Enjoy!

Bacon Chicken Alfredo

Ingredients (depends on number of servings)

  • 2-4 pieces of chicken breasts
  • 1 box of penne pasta
  • 1-2 jars of alfredo sauce
  • Bacon (I use real bacon bits but you can cook bacon)
  • 1 cup shredded parmesan cheese

Instructions

  • Cook on low in crockpot for 6 hours
  • Shred chicken
  • Cook pasta according ot box directions
  • In a bowl, mix chicken, pasta, sauce, cheese and bacon
  • Cook on high in crockpot for 30 more minutes
  • Serve with veggie of choice
  • Enjoy!

Taco Soup

Ingredients Instructions

  • 1 pound of ground beef
  • 1 ranch packet 
  • 1 taco packet
  • 1 can of black beans (drained)
  • 1 can of yellow corn
  • 1 can of Rotel
  • 1 can of beef broth
  • 1 can of light kidney beans (drained)
  • 1 can of diced tomatoes
  • A dash of garlic powder
  • Brown your hamburger
  • Add all the ingredients to the crock pot
  • Cook on low for 6-8 hours
  • Serve with tortilla chips
  • Enjoy!

Vegetable Soup

Ingredients Instructions

  • 1 pound of beef stew meat
  • 1 32 oz. frozen bag of mixed vegetables (or cans)
  • 1 small frozen bag of lima beans (I use half of the bag)
  • 1 large can of tomato sauce
  • 1 can of diced tomatoes
  • 1 can of succatash (we like more tomato taste)
  • 1 can of potatoes (or you can dice a regular baking potato)
  • Salt, pepper and garlic to taste
  • Add all the ingredients and juices to crockpot
  • (*I often add water to can of tomato sauce if it s not soupy enough or add beef broth)
  • Cook on low for 8 hours
  • Serve with crackers, grilled cheese
  • Enjoy!
